The innovative blade holder technology

The NOCK Active Skin Gripper® is an innovative blade holder technology for the thin skinning of salmon fillets with sharp blade for highest yield with elimination of the silver skin at the same time. Advantages:
  • Reliable and complete skinning of the fillets:
    No remaining skin on the fish tail or at the sides, that means no control and re-working measures
  • Loss of the fish flesh is comparably low as skinning with blunt blade (silver skinning): just about 0.5% of fish flesh remains on the skin, i.e. the yield of the fish flesh is nearly 100%!
  • No remaining silver skin on the fillet
The NOCK Cortex CB 495 SALMON is equipped as standard with the NOCK Active Skin Gripper® . Compressed air is required. When silver skinning or deep skinning, the Active Skin Gripper® is switched off.

Also when thin skinning other kinds of fish, e.g. halibut, you can win with this technology at the same time highest yield, perfect skinning and an excellent surface only achievable with sharp blade.
